Meatless Monday #2

Hi Guys!

Who celebrated Meatless Monday? We did!

The second one was a little less creative than the first. Hopefully within the next few weeks I can bring you some good meatless recipes. I’m afraid you may have to bear with boring a little bit right now!

We had spaghetti with organic pasta sauce & mozzarella and I had a side salad with spinach, carrots, and grape tomatoes (all organic) with the last of my Giant Eagle organic balsamic vinegrette, the greatest stuff ever.

Boring but good and it was ready in about 15 minutes flat- which is exactly what I needed after an awesome hour of zumba!

Note: I usually only buy 100% whole wheat pasta but I thought Schock might deserve this little white pasta treat since he was suffering through meatless Monday. (you like that, guys?)

I have a strange burst of energy. I scoured my kitchen and completed all my Civ Pro flash cards. I guess I’ll run with it and see how much I can get done before I pass out!

Disappointment

Have you ever eaten something so fast, or while doing something else, that you didn’t even enjoy it? Or notice that you ate it?

I have been trying to become more of a mindful eater lately. Stopping and taking notice of what I’m eating so I can appreciate it. And then, asking myself whether I am full or still hungry, in hopes of eliminating mindless consumption.

That did not happen just now. I made a new sandwich for lunch- cream cheese & pear butter on wheat. I packed it for the library but ended up eating it at my dining room table while doing practice problems.

I know it was a good combo, but I hardly even noticed I was eating it. Now, I feel disappointed. I’m not satisfied and I want to eat more, even though I don’t need to. I didn’t even take a picture!

While this may seem like a strange post, there is a purpose. During the next few weeks especially, even if you’re caught up in the finals/holidays/busiest time of the year craze, do yourself a favor and be mindful of what you eat.

You may only get a few minutes each day to savor your meal and appreciate everything that went into it. Take advantage of them. Stop, eat, think, enjoy- alone or with others. You just may feel better and more satisfied after. And during this festive season, feeling satisfied or not can make all the difference in the world.

Caged Animal

Hey there!

It’s amazing what an hour on the spin bike can do for a girl! I was forcing myself to study until 9, when I could finally take a break and cycle while I watched Sarah Palin’s reality show. I felt like a caged animal.

Studying all day is seriously enough to drive a person crazy. I’m not quite sure how people can sit in the library all.freaking.day. I need to be at home where I can move around (and pace)!

Anyway, for lunch I roasted some broccoli and cauliflower with leftover roasted potatoes & carrots from last night. It was nice and filling, and just the healthy lunch I needed.

After lunch we went to the grocery for a SERIOUS stock-up trip. I think we got enough to hold us over for the next two weeks. I sure hope so anyway!

Dinner was quick & easy. I picked up a box of these for the first time.

I thought it was pretty good for a quick meal but not something I would like to rely on often. The ingredient list is quite long & sodium is high. Maybe I’ll make my own black bean burgers sometime soon?

I had it on wheat toast with ketchup & mustard and a side salad with grape tomatoes and a little pepper jack as a treat. Not too shabby for a 5 minute dinner!

After dinner & more studying, it was finally time for a break! I did a mix of hills (during commercials) with some jogging and mostly did an endurance ride for the hour. It was amazing. I’m pretty sure exercise is the key to sanity during finals!

Now, to shower my gross self then study until I pass out (and maybe have a pumpkin bar- for protein…). Goodnight!
