I just made the best breakfast. Ever.
I adapted a recipe I’ve been seeing on several of my favorite blogs:
1/2 of a ripe banana
3T rolled oats
1T natural peanut butter
1T ground flax meal
1T milk- any kind, I used plain old cow’s milk
Dash of salt, cinnamon, and pure vanilla extract
Mash banana until wet. Mix in oats, peanut butter, flax, milk, vanilla, cinnamon, and salt. Once combined, it will be very soft. More like mush :-).
Heat a non-stick skillet on low/medium heat and spray with cooking spray. Scoop in the mix and form it into a pancake-looking shape. Cook for around 3 minutes on each side, checking frequently to make sure it doesn’t burn. There are no eggs so you really just want to heat it through and give it a nice crispy crust!
Once it’s done, you can top it with whatever you want. Peanut butter, yogurt, maple syrup, chocolate chips, and granola all come to mind.
I went with the other half of the banana, a dollop of Greek yogurt, POM seeds, and a drizzle of pure maple syrup. It was absolutely incredible. Definitely my best breakfast creation ever.
Great fuel to get me through this busy day- laundry, packing, working out and babysitting tonight. Then, home to PA tomorrow! Super excited.
