Hi Friends- good news! šŸ™‚ The camera cord is back!

I celebrated its arrival with some grilled banana french toast this morning

I have been making this delicious creation for months after reading it on one of my favorite blogs, Healthy Tipping Point. Check out Caitlin’s recipe for the original deal!

I made regular french toast with some excellent whole grain bread I picked up and grilled half of a banana in the same pan while the toast was cooking

Then, I put the bananas in the middle, another slice on top, and topped the whole thing with vanilla yogurt, strawberries, blueberries, and a sprinkle of cinnamon. So good, and still so healthy!

If you need a special breakfast treat or if you just want to treat yourself, give this recipe a try. I promise it will become a fast favorite. It tastes just a good with a drizzle of real maple syrup, too!

Agenda for the day includes a 3 mile run, possibly a Zumba class, and lots & lots of homework.

  1. I saw something on Food Network that is not the least bit healthy, but looked delicious! They made french toast using carrot cake. Maybe it
    should be renamed without the “toast” portion of the title!
