Homemade Potato Chips

Hi Friends- sorry for the lack of posting the past few days. I had my first final this morning so things have been pretty ridiculous.

I’m wondering how I spent the past few days, because I definitely don’t feel comfortable with how I did on my final. Ugh! Sometimes law school is the worst.

Two good things to come out of finals week(s) thus far: homemade potato chips & a salad challenge. Can you even hand the excitement?! πŸ™‚

Yesterday I spent $800 getting my car fixed and realizing I didn’t know anything about Tort law. The only solution: snack food. I needed potato chips in a bad way. Schock told me to go buy some, but I decided I could make them 1. healthier and 2. faster than going to the store.

The result? Crispy, salty, and the perfect study food without all the grease or chemicals.

To make these wonderful things, I simply washed and cut two small potatoes into super thin slices. I brushed a little olive oil on them and sprinkled on some chili powder & salt. I baked them at 375* for 18 minutes (or until they are starting to brown) on aluminum foil on a baking sheet (grease the foil). I peeled them off the baking sheet and devoured. So good! These definitely took care of my craving & didn’t make me feel guilty. Win, win πŸ™‚

The next development is a Salad Challenge

My goal is to try to eat one big salad every day for the rest of the spring/summer- so at least one meal/day will be a salad. I’m going to be super busy this summer (I already am) and I want to make sure I get my veggies in & keep the calories in check. Expect some interesting new combos & a dabbling in homemade dressing making πŸ™‚

Anyone else want in on the challenge?- I’m excited!

I had the same thing yesterday & today- a huge bed of romaine/spinach topped with carrots, tuna, and Italian dressing. A great, filling salad. I also had a few pita chips on top for some carbos πŸ™‚

Time for Michael Scott’s last episode on The Office. Ahhhh- so sad!!! 😦

Gigi’s Cupcakes

Hi guys! How’s your Saturday going? πŸ™‚

Almost Easter- who’s excited to break their fast tomorrow?!

Schock and I got up this morning and headed out on our long runs: 8 for me and 18 for him.

The only thing is, my dad ran 10 miles yesterday so once I got going this morning, I realized I couldn’t let him show me up. I decided I would run 10 miles instead of 8.

I survived it, but I’m pretty sore. It was fun though and I’m very glad I did it. You never regret going for a run, but you always regret skipping it! πŸ™‚

We’re at Schock’s parent’s house for Easter- unfortunately, I wasn’t able to go home thanks to finals. His mom has been telling me about this new cupcake place for ages so we had to check it out after lunch.

Gigi’s Cupcakes is new to the Dayton area but apparently it has franchises all over- the descriptions sound absurdly decadent and the cupcakes did not disappoint once we arrived!

I ended up choosing the Hot Fudge Sundae- the cherry on top sold me πŸ™‚

Even the box is cute!

Here’s the description:

Devil’s food cake with dark chocolate chips, filled with ganache,topped with a buttercream frosting drizzled in chocolate, with nuts and a cherry on top

It looks just like a real hot fudge sundae! It was so cute, I hardly wanted to eat it.

But, you should know me well enough by now haha.

I only ate half though, the amount of frosting on that thing is ridiculous.

It was delicious though and I give Gigi’s a 10 overall- super cute little store and very tatsy cupcakes. That’s a win in my book every time πŸ™‚

Creamy Dreamy Oatmeal

Hey there πŸ™‚ Hope you’re having a great Friday!

I’m back, as promised, with the best oatmeal ever.

Looks good, doesn’t it?

I’ve been keeping this secret for a few days now- I’m sorry. We’re friends, I shouldn’t be keeping secrets from you.

Super Awesome Creamy Oatmeal

  • Add 1/2 cup of old fashioned rolled oats to a spice grinder- Note: I used a spice/coffee grinder, but I think a blender or food processor would probably work too
  • Grind oats until they’re slightly less than powdered
  • Bring 1/2 cup milk & 1/2 cup water to a boil on the stove
  • Add oats
  • Add 1 small (or 1/2 large) chopped banana
  • Whisk together & let cook for about 4 minutes

Top with nut butter, berries, granola, raisins, apples- anything!

I suppose this is actually more of a porridge than an oatmeal, but who eats porridge these days?

Until Oliver Twist comes back from the depths of Brit Lit, I’ll continue to call this oatmeal.

The smoothest, creamiest, most delicious oatmeal you could ever hope to have on a cold, rainy morning πŸ™‚
