Flip Side

Last night I had the pleasure of joining my friend Aileen for dinner in the lovely town of Hudson, Ohio. Hudson is like the ritzy Akron suburb- very quaint, very trendy while looking historic, and more upscale than other Akron suburbs. I’m quite enamored with it.

What I’m more enamored with, however, is the burger joint called Flip Side.

As soon as I walked in, I knew I loved this place. It’s perfectly small enough to feel cozy but has enough seating to accomadate a larger party. And, as if the atmosphere and extensive craft beer list weren’t enough, they specialize in Ohio raised grass fed beef and organic chicken. Hello, match-made-in-heaven 🙂

Aileen and I started off with the mini corn dogs- a perennial favorite of ours when we dine out together. These were perhaps the most delicious minis I have ever eaten. Considering most come from a box and are thrown in the deep fryer, it’s not a hard status to reach, but they were my favorite nonetheless.

The mustard was really great too- nice & grainy!

As I said, the beers and mini corn dogs really won me over, but the cheeseburger stole my heart.

You guys know I gave up beef burgers awhile back for basically moral reasons- eating cheap beef just didn’t feel right anymore. However, I am not a vegetarian (yet) and I still love burgers. So, when Aileen said she knew of a great place with grass fed beef, I was in. It was so worth the splurge. I really think grass-fed, finished beef tastes infinitely better than cheap, factory farmed beef- and, I didn’t feel bad for supporting terrible agricultural practices after I ate it 🙂

I got the “say cheese” (I think) with you guessed it… pepperjack.

Honestly, I think this was the best burger I have ever eaten. Served up with fries, this was the perfect meal and I wish I had it again tonight!

Catching up with a great friend with a cold beer, some fried food, and a burger- what more could you ask for in life? 🙂

This week has been absolutely ridiculous. I am SO GLAD we have a long weekend ahead! We’re heading to Buffalo/Niagra Falls tomorrow for the weekend. Schock has the marathon & I have the half on Sunday- wish us luck!

I think I’ll be leaving my laptop behind so I can actually relax and disconnect, but I’ll be back with a full race recap & some fun Niagra photos on Monday 🙂

Busy Day Pasta Salad

Today I accidentally thought it was Thursday. Grades come out tomorrow and I said, “what a mean thing to do on a Friday.” Weird. Guess this busy schedule is confusing me!

At least lunch was quick and easy today. For dinner last night I made a big pot of pasta. Schock had some with sauce and I used the rest to make a big pasta salad to serve as dinner last night and lunch this week. It was a great idea! 🙂

It’s so simple, there really isn’t a recipe but I’ll share what I did anyway:

  • 3 servings cooked100% whole wheat pasta of your choice- I used rotini
  • 1 cup of cooked frozen peas
  • 1 can of rinsed & drained white beans
  • drizzle of salad dressing (I used white balsamic) & a sprinkle of parmasean cheese

Simple but actually really delicious AND easy AND fast. What more could you ask for? 🙂

I ate this hot last night but it was really great cold today too!

I can’t wait to make pasta salad & other dishes with my garden fresh vegetables. I ❤ summer

For breakfast I had 2 organic farmer’s market eggs & a vegan blueberry waffle from the farmer’s market/my freezer. This breakfast kept me full for a solid 4 hours, which is seriously rare- I was stunned. Maybe it was the maple syrup I doused it in? 😉

Blueberry waffles = one of the best breakfasts ever. I wish I had an arsenal in my freezer.

In other news: is anyone else watching The Biggest Loser Finale?! Holy cow- I love this show! The finale is so fun after following along all season. So amazing what people can do with the right help 🙂

I need to get some work done before bed 😦 boooo, summer class!

A Weekend Off

Hi guys! Hope you had a great weekend & Monday 🙂

I took the weekend off from everything. For the first time since spring break, I shut off my computer and didn’t touch it the entire weekend. If felt so good to just disconnect from the world for awhile. We enjoyed a great weekend in PA with my family, complete with a cookout & a new bike purchase. (I’ll show you the bike later!)

I’m cooking dinner quickly then heading to the first night of summer class- yuck! I am seriously NOT a night person- I stop functioning around 8 pm, so class from 6:30-9:30 three nights a week should be… interesting.

Anyway, I thought I’d update you with some pictures from the weekend before I head off to class 🙂

My cookout plate- a turkey burger will all the fixings, baked beans, coleslaw, potato salad, a few chips & a pile of veggies. Also consumed: a million chips with salsa, 2 small pieces of cake, and fresh fruit. My mom knows how to put together a great spread!

Massive amounts of road trip snacks. Very healthy, wouldn’t you say? 😉  We ran 8 miles on Saturday & biked Sunday so I feel like the splurge is alright 🙂

Sadly, the KitKat melted in the car so we didn’t get to enjoy the whole thing… all 4 servings of it.

Today’s salad beast- romaine, green & yellow peppers, cucumbers & pepperjack. My mom send me home with a huge bag of chopped veggies, so I just had to toss them on my salad this morning. Perfect.

Also, pardon the picture. My co-workers don’t know about the little blog yet so I creepily snapped the picture at my desk 😉

Well, I’m off to get ready for class. My dad my have a heart attack, but after working all day, I think I’d rather work than go to class these days. Can it be that I’m turning into an adult?!
