Quick Snack Idea

Just stopping in with my favorite new snack idea: avocado egg salad.

All you need to do is mix a diced hard boiled egg with half an avocado, add salt and pepper, and eat!

I like to eat this fast egg salad in a whole wheat pita, which is around 100 calories. The whole snack, including avocado, egg, and pita comes in under 300 calories. Perfect for a filling snack or a quick lunch!

Two Ingredient Pancakes

If you read any other “healthy living” blogs, you may have already seen this recipe. It’s been making its rounds through the blog world over the past few months. The reason? It’s delicious, easy, and super healthy. Definitely a winner.

These little pancake gems are made with, you guessed it, only two ingredients: bananas and eggs. You simply mash up a ripe banana and mix it with an egg. I find they hold up better with two eggs, or one egg and two egg whites. If you want a lower-calorie pancake, just use one egg.

I also like to add a splash of pure vanilla extract and a dash of cinnamon to mine. If you’re feeling really crazy, you can toss in a handful of blueberries before flipping. The sky’s the limit.

Two Ingredient Pancakes

+ 1 small, ripe banana

+ 1-2 eggs (or 1 egg & 1-2 whites)

+ cinnamon & vanilla (optional)

Mash banana with fork (or blender) until very smooth, almost liquidy. Add desired amount of eggs and cinnamon/vanilla if using. Mix well with fork. Spray a non-stick skillet with cooking spray. Pour pancake batter into pan and cook slowly over low-medium heat, flipping once when pancake is set. Add extra ingredients, such as blueberries, just prior to flipping. Cook approximately 5-8 minutes.

Note: The key to getting a pancake-like consistency instead of a pile of scrambled eggs is to cook the mixture over low heat for several minutes. You will be tempted to crank up the heat and flip it too soon. Trust me, that will lead to disaster. And a burnt breakfast. Cook it low and slow for about 5 minutes, then flip it only if it’s set up. If not, wait a little longer.

Once your pancake is finished cooking, you can top it with whatever your little heart desires. I like to top mine with either peanut butter, almond butter, or sunflower butter. Other options are maple syrup, fresh fruit, etc.

Depending on the number of eggs you use and your toppings, these pancakes come in around 300 calories. Perfect for a satisfying breakfast that will power you through the day.

Someone else in this house is also verrrry interested in these pancakes…

My Fitness Pal

Let’s talk about my favorite app, My Fitness Pal.

What is it, you ask? It’s a program you can join (for free!) to help track things like your calories, exercise, water intake, etc. It helps take some stress out of calorie counting by keeping everything in a handy little spot. Plus, it totally takes the guess work out of weight loss by telling you how many calories you should consume to reach your goal weight within the time frame you choose.

For instance, I currently weigh around 133 pounds. I’d like to get down to around 125 within the next month or so. I put this into My Fitness Pal, along with my typical activity level, and it tells me how many calories I should eat. Right now, I am allowed 1200 calories per day to reach my goal weight within the desired time.

Let’s be honest: I am an eater, as you guys know. I love to eat and I eat a lot throughout the day. 1200 calories is simply not enough for me some days. There’s a solution for that, though. When you exercise, you plug in your activity and the time, and it adds additional calories to you daily “bank” based on the amount your burned. It’s perfect for me!

My activity level has gone way, way down over the past few months. To a point where I hardly recognize myself. I all but stopped running and working out- it was terrible. It’s taking me a while to get my fitness back to a suitable level, and my caloric needs might change once I do, but for now 1200 calories should work well.

Except I go over my limit most days?? Ugh! I am not good at this dieting thing, but I am trying!

If you need a way to help track your calories and exercise, and are maybe even looking to lose a little weight, I definitely suggest giving My Fitness Pal a try. All of my girlfriends are doing it too and it’s great fun to follow each other on this journey!

Happy calorie counting and I’ll be back tomorrow with a new recipe!
