Okay, hear me out on this idea before you make any decisions.
A blog I absolutely love and have been reading religiously for years, the Fitnessista, made this Chicken Crust Pizza a few weeks ago. At first I was a little skeptical but then I came around to the idea.
While meal planning for the week, I remembered the idea and decided to give it a try. The verdict? Amazing.
This meal idea is everything a busy person could ask for: delicious, easy, quick, healthy, and easy to customize.
I made two- one for me and one for Andy. I topped mine with barbeque sauce and mozzarella cheese and Andy’s with pizza sauce, mozzarella cheese, and pepperoni.
The entire process took around 25 minutes and it was such a nice change from heavy, carb-loaded pizza.
Chicken Crust Meatza (for 4 servings)
- 1 lb. extra lean ground chicken or turkey
- 1 egg
- 1/4 cup plain breadcrumbs
- salt & pepper
- toppings of choice: any of your favorite pizza toppings would work perfectly
All you need to do is mix the chicken, egg, breadcrumbs, and s & p. You can make a bunch of mini pizzas, one big one, whatever you want. Basically, just make a big meatball and smash it down into a thin patty. Yes, this is kind of gross but it’s worth it.
Bake the “crust” for 15 minutes at 400*. Remove from the oven and add toppings. Bake for another 10 minutes or until toppings are heated and cheese is bubbly. I broiled mine for a minute at the end just to make the cheese nice and bubbly.
Remove from oven, slice, and enjoy. We were able to pick up the slices and eat them just like regular pizza. Again, amazing.

Like I said, this meal idea is great. It’s quick and easy, plus it can be really healthy (depending on your toppings).
And, the healthier the meal, the more Girl Scout cookies you can eat afterwards!
